The Best Not Fried, Fried Chicken I Have Ever Had...

Last night for dinner I decided to try something new, Baked Fried Chicken and it was wonderful! Here is the recipe for those of you wanting something to try something new with your plain chicken breasts.

4 Skinless Chicken Breast (boneless or bone-in just adjust cooking time)
3/4 Cup of Mayo
1/3 Cup of Mustard- yellow or spicy

2 Cups of Rice Crispys (can be substituted for other cereals, Chex or Special K)
1 Cup of Italian Bread Crumbs
1 TBSP Olive Oil

Paprika
Red Pepper
Salt & Pepper
*these are to taste, I used about a tablespoon of each

Pre-heat oven to 400 degrees. Spray drip pan with non-stick spray.

Mix mayo and mustard together in a bowl. Pour cereal and bread crumbs into a gallon Ziploc. Crush cereal until the pieces are small and uniform. Add olive oil to gallon bag and mix, set aside.

Dredge chicken into mayo/mustard mixture so there is a liberal amount covering all sides of the chicken. Drop chicken into cereal one at a time to coat. Place chicken on drip pan. Once all pecies are coated lightly spray the chicken with the same non-stick spray.

Bake for 30-40 min for boneless chicken and 45 min to and hour for bone-in chicken.

This is wonderful and quick enough for a week night meal!
